This wine was made from grapes grown in Viña San Pedro’s finest vineyards in the Cachapoal Valley. The vines are vertically positioned and drip irrigated.
Following a 4-day pre-fermentation cold soak, the alcoholic fermentation took place with selected yeasts and controlled temperatures of 25 - 27 °C with 4 pumpovers per day and 25 days of total maceration. 100% of the blend was aged for a year in French oak barrels, 30% of which were new.
Ruby-red with good intensity.
The nose is interesting, with aromas of red fruits, such as raspberries, as well as notes of plums and menthol. Mild notes of toast, chocolate, cedar, and cinnamon lend complexity.
Nice fruit and good body appear on the palate, with ripe, well-balanced tannins that lead the wine to a long, persistent finish.
Ideal with Prosciutto or Serrano ham, game birds, venison, risotto, and cheeses.
